I like this new feature since it saves a lot of time but I can't seem to find a way to change the default folder in the EDIT PROPERTIES area.

lol but I've got an answer now!
Well you were right to look into the properties.
If you switch to "Newsgroup" and then click on "Default" and then look at the bottom you'll find something like
Save: C:\
If you click on "Browse" you'll be able to change the auto-download folder.

"default" is the topmost entry in edit menu->properties->newsgroups
i put the explanation right into the download page
http://www.netwu.com/ue/download.htm
in prior versions (and incidentally in newspro) the topmost entry is rather reflecting the last save location after prompt (not always but when it is logical).
with the import folder (just i guess it is not so much used) and now with the auto save it means if the directory is set to "default" it may change if the default entry destination changes, so after a manual save with prompt "auto" destination folder may change which is not what we want.
so in v1.2 there it still remembers the last save location but it is kept separatedly (not shown in the "default" entry) and it will prompt rather for the last save location than to the default entry folder, but in automatic (silent) modes the save locations will be fixed in settings.
