reset headers removes headers without bodies with the exception of pending (marked for download) and flagged (context menu->mark->flagged or click under the flag column to see what means flagged). when you download headers in the next time the headers will be downloaded again.
catch up means you don't want to see/download previous headers so it resets the newsgroup but won't download previous header range, it will download only newer headers (e.g. even if you reset newsgroup and catch-up is set it won't download older headers).
apply retention you better read help notes (UE.txt), in short if you limited retention it can be set to be applied manually or automatically when you open newsgroup (properties->general->apply retention automatically...). for example if you set retention to 10 days and you open newsgroup after 15 days it is the moment when older headers are removed from the database. like in reset headers headers with bodies, pending and flagged are not affected (also for catch up).
also you can look in context menu at header range properties when you download headers, reset newsgroup or invoke/reset catch up you'll see what is changing there. i suppose you know what is header range (article numbers).
Thanks

I guess, I'm still trying to figure out a way how to get only headers from a certain date on. E.g. I want only headers from a certain group from February the 15th till today, how would I do that?

in edit menu->properties->newsgroups, select the newsgroup then set there
...-15feb it is the same as -15feb (dots can be omitted - means range).
or if you want to get headers for the last 5 days (it is the same if today is february, 20 you can set there 5, you'll see in the list control ...-5d0h, 5 days 0 hours).
then press ok to close properties sheet and invoke "get new headers"

Alright, so this time I really had to set it up again since I re-installed windows. I had transferred the complete program and database folder from my backup but whenever I donwloaded and saved attachments (ALT-D) UE would download but not display download speed but no files actually ended up on my harddrive. So I re-installed UE and set it up to my preferences manually.
I was planning on downloading only those headers from the last 12 hours and set edit menu->properties->newsgroups retention to 12h. My newsserver has a retention of 20+ days so I hoped it would only download a fraction of those 2.5 million headers of that particular group. However, when the task manager showed 3% of those 2.5 million retention after having downloaded for 15 or so minutes I cancelled the task.
1.
Does UE download/browse all 2.5 million headers in total and THEN keep only those of the last 12 hours? I thought the idea of shortening retention would save me the hassle of downloading all headers in a group, kind like with an incremental update? Or are those 2.5 million headers only those headers of the last 12 hours which somehow seems a bit much to me.
2.
When cancelling during header download why don't I see new headers popping up in the newsgroup pane?
3.
When cancelling why don't I see the 3% of downloaded headers in that newsgroup?
2+3 might be related to 1., I still don't seem to have gotten the hang of it

That sounds like a firewall block on the new system install. Check your firewall to be sure it is allowing v1.7 through. It has to be reset with each new version.
