How to make sure I have all headers

I used to have UE set with a low number under "retention/dates," and the result is there were older headers on the server I could not see. That was okay for when I was doing this.
Now I want to see all headers on all groups. Well, at least for now I do. So not being sure what to do, I changed "retention/dates" to 5000d (which is more than 10 years) to make sure I was exceeding whatever a server might have. I don't remember if I rescanned headers or not, but it seemed to pull in a bunch of headers from older messages.
3. Now I added a second server. And they have longer retention than my first server. But was not sure what to do. And I've confirmed that my server has headers I'm not showing in UE. I did this by searching for older headers using the UE search service.
Can someone tell me how to make sure I have all headers. I'm looking at the Rescan headers setting in the General tab, and it has two settings. I don't know what to do with them. And how should I set retention in the Server tab?
